COCAO-CASHEW Energy Balls are the perfect clean energy option! Packed with antioxidants and healthy fats, they are sure to give you that pre/post-workout boost you desire, or satisfy that sweet tooth...without compromising your health! WIN!!


COCAO-CASHEW Energy Balls

Total Time: 10 min

Yield: 20 Energy Balls


Ingredients:

15 Medjool Dates (soaked for 20 min)

1 Cup Un-sweetened Cashew Butter

1/2 Cup Unsweetened, Shredded Coconut (+ extra for coating balls)

1/2 Cup Milled Flaxseed

1/2 Cup Raw Cocao Powder

1/4 Cup Cocao Nibs


Instructions:

1. Throw soaked dates in High-Power Blender or Food Processor, and blend until they form a thick dough or paste-like texture.

2. Throw the remaining ingredients in blender and blend until all ingredients are well incorporated.

3. Remove the sticky mixture from blender, form 1" thick balls, and roll individually in remaining unsweetened, shredded coconut.
